Joining me today is Lauren Danson from
Mizuba Tea Co. Lauren, thank you so much for
joining me today
Hey! Thanks for having me. So Lauren is one
of my favorite matcha providers,
based out of Portland. So Lauren you can
just share a little bit about how you
discovered tea and what inspired you to start Mizuba Tea Co.
Yeah, wow, my stars. That is quite the story
but here we go.
Well, the very first cup of tea I can
remember having is Constant Comment by
Bigelow. It has a special place in my
heart. You know, you gotta stick to your
classics. In high school, I came from a
foodie family and my parents were like
really into food, really into wine
and so I started learning how to taste
things pretty critically and I kind of
realized I was like there's a lot more
to life than Bigelow tea bags, like a lot
more life. Whenever I would travel
in high school, my family traveled
quite a lot, and I subconsciously would
just kinda make memories and kind of
remember my travels through the teas I
had. All my scrapbook stuff like tea bags
from around the world so I am asked this
connection and started actually getting
really nerdy about it in high school. And
I would take online tea classes
just for fun. You know, just wanted
to learn about it. Just the basics, where
it came, from the different kinds. And my
mom was a horticulturist so I
knew how to take Camellia Sinensis when I
was like 16. And then in college,
here we are, I started hosting tea parties in
my dorm room. So I went to a really small
College. Westmont College, loved it! And
twice a week I would actually end up
having about like 10, 20 people in my dorm
room drinking tea and I would clear all
the furniture, put a blanket on the
ground. And I just wanted to share it with
people. I realized that you could have a
really good tea but I never really
enjoyed it as much as when I was
sharing it with somebody. I could
appreciate it by myself and I could like
get really giddy about you know the
luscious liquor, the mouthfeel or
whatever. But I just loved sharing it with
people. And then fast-forward senior year
I had the opportunity to go to Japan. I
was just visiting my salsa dancing
partner who had graduated a year before
me. And was good friends with my family
so he was like "Hey, come visit me in
Tokyo.I'm teaching English." and I was
like "Yeah, I'll go!". And so I didn't go for tea
necessarily but I knew we would have good
tea there. I was 19 years old and
obviously first cup of tea just blew me away.
Grocery stores are kind of my favorite
thing on the planet. Super-weird but I
love foreign grocery stores. And so I
noticed that like Brand X of tea on the
like the lowest shelf of the store was
still 20 times better than anything I'd ever
had. And so my mind was just like yeah, I
exactly like that. And so that's one.
Number two, I just met so many people
just like staying with somebody and
seeing his community. Like every
relationship that I was introduced to or
just you know really got to know the
person was over a cup of tea.
This is what it's meant to be like,
just like the medium of it, you know? And
then thirdly I'm kind of going fast here
but I met a tea farmer. But that was, you know, I
wasn't planning on it was looking for
it. But it was provision and I
think a huge blessing. I just got lost
which is how most good things happen
Well it was my friend and my dad and I. We
got lost coming back from a day
trip outside of Kyoto. And on the way
back to coming to Coto we actually
stopped the bullet train at fuji which
to those familiar
I'll is like location of like team that
essentially and I didn't know that at
the time when we got off the ground we
started walking around I very quickly
notice every shop is dedicated to teens
like T noodles he treats ta scream and I
was losing it
yeah we're so I had every day and during
that time running around i ran into a TV
farmer and he shared with me Marchand is
literally just kind of watch ever had
and I was like here's the thing i was an
english journalism major especially
think Charles Dickens so we're thinking
about business
absolutely not you know I know just know
so that was my senior college just I was
like this much as amazing how do i bring
back just to share with friends and
family I just wanted to bring it back to
share and i ended up going to grad
school for publishing in denver and that
whole time I was supposed to be a book
nerd i kept emailing just refined was
like a cool contact and I didn't realize
this is not how most tea company start
most companies don't know the farmer
maybe I should hope they do but you know
how the case but he went to he was like
do you want samples and then wasn't
welcome to be yeah that's how was it was
started and now it's been three years
and I my farmers exclusive supplier and
I do I try to go back every year for
harvest season are in April May this
year we might have to go in july but
it's okay like there are still be fun
stuff happening but I try to go back to
hang out with my farmer and and because
it really is all about the relationship
for me so I obviously wouldn't be doing
this time at T farmer I don't like I
think you scared probably yes
so we go ice cream and lunch and hang
out and he's got three daughters which
is great and guys I'm a huge fan of your
daily matcha but i know that you also
had several other kinds of matcha of so
good a little bit what the differences
are between wait a minute I'll go get
from you look at this video but guys
don't have to hear it
alright that so what we have here we
have the daily which nicole mentioned on
it
it's yes uh the daily I mean it
literally because they wanted to drink
it everyday and that's pretty much the
impetus behind not it's from younger
plants on the farm so I probably most of
you know that you can harvest eat until
about five years old so this is just
kind of our basic drinker it's just
really really approachable
would you agree and I don't have one
open right now but if I did I would
really show you it's really really
bright green and we still across the
board of all parties we still stone
grind all of our market so it's not
polarized metal ball ball it's not like
crushed they are mechanized but we only
revolves the grinder about 30
revolutions per minute so it's really
slow and what that does is preserved and
the cellular structure of the leash so
you know flavor and the nutrients are
completely like overheated or destroyed
it's really important when you get
nutritionally so that that's over
alrighties but for the daily and it is
harvested more than once a year at
demand but it's all from and tension
tension meaning leaves that's what much
is called before stone-ground you can't
have a chat unless it's from around fact
so I'm all parties are still shade
ground were 30 days before harvest soho
some will be like two weeks but have
really high-quality much should be at
least two weeks before we still do that
and that's the basic thicker just
younger plants on the farm and and just
completely comfortable and smooth and
delicious and the next one the house
how so again this one has complete with
songs sorry I get really excited
that's what our house I would they ever
most classic japanese manga it's very
mommy forward it's extremely are creamy
but also very oceanic so you will get
that I to see we kind of experience
which is what
which I think that's a really classic
macho if you get some oceanic at flavor
notes in there and we only harvest this
once a year to get jas organic
certification it's my understanding that
it's really difficult and kind of
strange the plants depending on like how
restrained your fertilizer uses so we
still use fish fertilizer but it's very
limited I'm where is this guy like it's
all the fish fertilizer he wants this
dude if we want to get the sticker it
has to be restricted and frequently
harvested once you without like
completely plan no understanding i
should i'm talking through the flavor
profiles because my father really does
approach team like whining like and it
is kind of funny to think that matcha
green tea you be like it tastes like
green tea and it does but there are
beautiful nuances and t like you would
get in winder chocolate and we're all
waiting for the day where we can stop
saying tea tastes like wine or like
think of it like one even like to but
the the mean I mean factor behind that
is term or right so what oil in the
climate and the position and the side of
the hill and the weight harvest in part
so beyond and we have our no gold meat
which is one of my ceremonial options
know me is also certified organic and we
also harvested once year some reason but
it comes from older plants on the farm
so it's got a lot more mature now feel
good that makes sense it's a fuller body
and this is our strongest much it's
extraordinarily robust like if you want
in your face matcha I would go for this
guy
so this one's been extraordinarily
popular it's just very complete
experience would say not these aren't
but very tangible and lastly i got my
ceremonial I Cora a crow in japanese
means of the heart and the soul and kind
of like the essential and we named it
that because it's the first 1i had ever
and we harvested by hand so it comes
from really all plants on the farm and
is just handled with care and
I think you all are a recurring it
what sort of looking for a reaction and
recurring reaction when tipping is
matcha is it tastes like Japan it tastes
like Japan like I'm sleeping Luigi right
now which times some cheese for you guys
but it's true and it's just my absolute
most smooth much I have to offer and the
aromatics are kind of like categories
milk chocolate which I'm not saying it
tastes like chocolate but it's probably
like sensual or the suite which is very
nice so yes I enjoy this one a lot i
enjoy all I actually do have a a
culinary line and the main difference
being culinary has unfortunately been
really abused as like here's treat
matcha culinary makes it which is really
sad because like you don't open the back
corner you like this is yellow man
bookends approximation so sad I granero
is just stoneground coarser to stand up
to the flavors that you add too so it's
very very very strong but it's great
when you add it to any milk you want for
lattes and actually love making masala
dosa saying or comments and hummus but I
cupcakes are probably more competition a
lot of people with a first we tried
watching they they usually have a lot of
trouble the first couple of trying the
learning curve of what do you think is
kind of like the most important thing to
make sure you wake up with atty simple
much of besides these if we use out but
you're right
no just I should hire you know just
kidding but yeah that is a great
question because part of my biggest
value of mazuma that I want much will be
approachable you know i'm not going to
say no you can't have much unless you
have a goal set up
you know what i mean by that being said
the chosson so important we don't use
occasion with you guys
ok so much as powder right and as a
powder your job is to area really really
well so the chosson is really incredible
because this guy
this is 1 i've had for two years so many
ones look nicer but the chosson a
high-quality one should be carved into a
hundred and twenty problems a hundred is
also decent you're totally fine but it's
carved in 225 pounds from a single
considering boo & 2 into that and then
individually just write it so the really
fine times work really well to aerate
your teeth really beautiful frost I
shouldn't be surprised but stay with me
here we would like this really rapid and
she motioned don't press really hard on
it but just some of the wrist wrist so I
mean I would say that but for people
that don't have a charge all is not lost
the other way that's I think in my
opinion were approachable than using
which is shaking it like a cocktail or
just like a Polaroid picture y'all so
basically and my japanese familyy I ask
that you guys is this appropriate like

matcha and rain determine it up just a
half teaspoon sugar up and poured it out
for them and they get its hair looks
like like you know you can get maybe
like all laughing imagining some like a
Geisha person just like you know having
a beautiful tools kneeling like and then
just lifting the thing going
