hey everyone it's James from funfoods and
today I'm trying to make Kulfi which is
an Indian ice cream now this is
strawberry flavor in it tastes delicious
so keep watching and I'll show you
step-by-step how to make this now I
never made this before so I kind of
combined recipes i saw online and came
up with this recipe so if you make it
different
that's fine write in the comments below
and tell me how you make it and how
yours is different i know some people
put dried fruits and nuts in there i
just went with the strawberries so
hopefully you like this and like I said
keep watching and I'll show you how to
make this now the first thing i want to
do is start off by puree and some
strawberries
I have one cup of strawberries which is
about eight strawberries whole and i'm
just going to put it in a pot now you can
puree these if you put them in a blender
or just puree them but I want to reduce down
some of the water in there so I will boil it
away so i have that i have a fourth a
cup of sugar but i'm not going to use
all that and here i'm gonna use about
half of it so I'm gonna use the other half for
the rest of our ingredients now I just
want to heat this up until it starts to
boil down and after your strawberries
have softened up a bit as you stir just
mash them down a little bit and after a
few minutes you'll get this nice thick
consistency and we're going to take this
we're going to turn it off and we're
going to strain this before we use it in
our Kulfi now I'm just going to strain
my puree my strawberry puree I'm just
gonna
now you don't have to strain this if you
don't want to but I don't want the large
chunks of strawberries in there so
I'm just gonna push it in then you should be
left with this nice thick puree which we
are going to pour into our reduced milk
which will help with the flavoring now
what I have is a large flat bottomed pan
you wanted to spread out a bit so that
it will heat your melt evenly and i have
here this is about one liter of whole
milk I'm just going to pour it in there and
really important you want to
continuously stir this until it reduces
to about how the volume that is right
now ok so now that my milk has reduced
to about half of its normal volume and
I'll turn off the heat still stir it and
I'm going to add in the rest of my
one-fourth cup of sugar stir it in
then I'm gonna add in my strawberry puree stir that
through really good
what I have here is cardamom powder if
you can't find cardamom powder it comes
just like this it's a ground cardamom
powder and you can get any spice isle of
your grocery store i'll put a link below
just in case you can't find it because
it can be hard to find in America anyway
put this through mix it in
after that's mixing really good we're going
to set this aside i want it to come to
about room temperature before I put in
my molds and then we'll freeze it from
there
so now what I want to do is take this
transfer into something with a pour spout in it that way when I pour it into my
molds it will be easier you can do it from the
pot but i just find it easier to do this
so it's about two cups worth and like i
said i was going to cool down a little
bit more
ok so now that my milk is cool down what
I'm gonna do now is I just have this
mold here and there just like popsicle
stick molds i think i got this at the
dollar store if i can find one online
out the link in the description below
arm i'm not sure because i like i said i
got the dollar store but sure you can
find something similar this online now
first we want to do is actually take
some more of this cardamon and almost
sprinkle just a little bit in the bottom
of each one
it's a real sweet tasting spice I don't even
know if you can call it a spice and i'm
just going to take this and pour it in
now this made about seven of these now
of course depending on how much you your
reducers down and depending on the size
of yours that will determine how much
you make
I'm just going to take these pop these on
here and then we're going to take these
we're going to put them in the freezer
and we're going to leave them in there
for quite a while
and my Kolfi has been in the freezer for
about five hours and what I want to do I
have this warm water and this dish here
i'm just going to take this dip this in
there so that they'll come out of their
holders real easy and I'm gonna do it
right now I'm not going to keep them in
their long just to have different there
for a minute
pull them out and see if it helps release
ok that's what it looks like right there
now it's time for the taste test
I've never eaten this before I've never
even eaten it yo from a vendor or
anything I've never been in India but
hopefully it's really good
I've heard good things about it and I'm
gonna give this a shot for the first
time ever
it's good i really taste the cardamom and
the cardamom is real like a sweet flavor to
it and it's real dense this ice cream this
ice creams is really dense so it's really
good from what i could taste so far as I
work on it
