Raw Vegan Chocolate Cake | Viva La DIY - Duration: 8:46.

Hey everyone

I'll be sharing a raw vegan

chocolate cake with chocolate icing recipe.

This is so delicious!

I've been making it for my dad's birthday

for the past three years now.

It's actually become one of our

all-time favorite homemade desserts.

It's so rich and tasty.

If you'd like,

give this recipe a try

and let me know how it turns out.

So, let's begin.

PART 1: CHOCOLATE CAKE

Start with one and a half cups of almonds

and one and a half cups of walnuts.

Place them in your food processor and blend.

I used a medium settings.

The desired consistency will not be too

fine and will appear slightly grainy.

Once it looks about right,

gradually add the other ingredients.

Start with one and a half cups of raw pitted dates

and one and a half cups of raisins.

Blend together in your food processor.

Again, continue add little by little.

Repeat the process.

The consistency will start to gradually build up

thicker and chunkier the more you add.

Just keep going

until you finished up your main ingredients.

Now add one third cup of raw cacao powder,

1 tablespoon of cinnamon powder

and 2 tablespoons of pure vanilla extract.

Blend them together.

Once it's ready, it will looks like a doughy ball mixture.

And it'll look something like this.

Go ahead and mold it into your cake pan.

Once the cake is evenly spread,

cover it with the sheet of plastic wrap.

Then set it aside to chill in the fridge.

PART 2: CHOCOLATE ICING

Add 1 cup of raw pitted dates,

a quarter cup of raw cacao powder

and a quarter cup of coconut oil.

Here I'm having to scoop the coconut oil.

It's sticking to the measuring cup,

but once I get it all in there

I'll just add the final ingredient, which is

three-quarter cups of water.

Blend together in your food processor or blender

on a high-speed.

Once it looks uniform,

take the cake out of the fridge.

At room temperature,

the icing will be nice and smooth

... slightly runny.

Cover the cake with icing.

Here I'm using a spatula to clean off the blades,

letting some of the icing drip on the cake

so none of it goes to waste.

As a bonus,

add your favorite topping.

I used

raw organic cacao beans,

which is one of my favorites.

Of course,

this step is totally optional.

Just decorate it to your liking.

And there you go,

set it in your freezer a few minutes

before covering it with plastic wrap again.

Then store it in your fridge and it'll

be there waiting for you when you're ready to eat.
