hey guys welcome to cook with Nancy if you are new to my channel or you haven't
subscribed already please go ahead and hit the subscribe button right now today
we are going to make a vegetable biryani this is very easy simple and loaded with
all the goodness of those vegetables you can simply serve this biryani with
raita that's made of your yogurt cumin powder
and some salt and it's so that easy let's get started with the ingredients
I'm going to start cooking the rice from 1 and 1/2 cup rice with 3 cups of water
1 bay leaf 1 inch of cinnamon stick 1 star anise four cloves I am using pinch
of cardamom seeds if you like you can use the whole cardamom 2 numbers
half a teaspoon cumin seeds now cook them until the rice is nice and fluffy
and set it aside now in a skillet I'm adding 2 tbsp of ghee you can use just
oil if you like once it has heated I am going to go
ahead and add half a teaspoon of cumin seeds quarter teaspoon of fennel seeds
just saute them until the there is a nice aroma now I have 1 tablespoon
ginger and garlic finely chopped now I'm gonna go ahead and saute that for a
couple of minutes until the raw aroma leaves and then it turns into nice aromatic
now I have one onion that is thinly sliced saute this until the onions
turned soft and translucent I have two tomatoes that is large size go ahead and
saute them I am also going to add some salt to it while sauteing it so this
helps the tomato to get softer and tender sooner
add salt as needed now saute until the tomato turns softer and mushy just like
that and oil so I'll start separating from the sides I have one tablespoon
cumin powder and coriander powder combined half a teaspoon turmeric powder
chilli powder as needed and half a teaspoon garam masala now
just combine them together unto all the masalas we'll combine all the spices are
well combined now I have 1 cup of coriander and mint leaves finely chopped
just saute them for a couple of seconds once the mixture is well combined I am
going to go ahead and add the carrot this is 3/4 cup of carrot finely chopped
I have half a cup of beans French beans finally chopped just saute them for a
couple of seconds to coat the vegetables with the masala 1 large potato I'm using
red potato so I'm using the skin if you would like to peel the skin you can
definitely do that I have chopped them into small pieces now coat them again
with the masala to combine the vegetables now I'm using vegetable broth
you can use chicken broth beef broth or just plain water I'm using 1 cup of
vegetable broth now give it a quick mix if you want more broth you can
definitely add I am using as per the consistency I like I am adding half a
cup of frozen peas just give it a good mix again check for
seasoning if you want more heat more salt if you also like to add chillies to it
you can definitely add that now cover this and cook it until the vegetables
are cooked through now I'm gonna remove half of the vegetable that we just made
into a bowl and now spread this vegetable as a single layer I'm going to
go ahead and add the cooked rice on top just half of it and then again spread it
evenly as a single layer now I'm going to just spread some nutmeg over now add
fresh coriander mint leaves at this point you can also add saffron milk if
you like I'm adding the rest of the vegetable we reserved just spread it
evenly again add the remaining rice and again spread it evenly so to make a
saffron milk all that you need is hot milk and pinch of saffron soaked for
couple of minutes and you can just pour a little bit on top for a good color and
the flavor I am adding nutmeg again on top with some cilantro and mint leaves
now cover it up and reduce the heat to low and cook it for another ten to
fifteen minutes your vegetable biryani is ready in no time you can serve this
