...today I show you a recipe for super delicious & juicy potato rolls...
...for that bring to a boil 300 grams peeled potatoes in slightly salted water...
...& then cook for about 20 minutes over low heat & the lid closed...
...skim off 125 milliliters potato water after cooking time & set aside to cool down...
...also drain potatoes using a colander & allow to steam...
...next, crumble ½ cube fresh yeast into a tall container...

...a good dash olive oil & 1 teaspoon salt into a mixing bowl...
...knead together all ingredients with a kitchen machine or mixer with dough hooks for bout 4 - 5 minutes...
...the dough seems to be tough & crumbly first...
...but if you continue kneading it will get more softer & elastic...
...until the dough looks like that...
...smooth & sticky...
...afterwards transfer the dough to a slightly floured countertop...
...also slightly flour the dough on top...
...thoroughly knead the dough with your hands...
...until the dough is covered all around with a light flour layer...
...then lay he dough back to the mixing bowl...
...& allow to rest covered with a kitchen towel for about 45 minutes...
...until the dough volume increased significantly...
...again transfer the dough on a slightly floured countertop...
...& briefly knead with your hands...
...shape the dough to a ball...
...& cut into 8 - 10 equal sized pieces...
...if that's done we can start to form rolls...
...for that round each dough piece with circular movements under your palms...
...& repeat that for the rest of the dough pieces...
...next, place the dough balls with a little distance to each other on a lined baking tray...
...finally sprinkle the rolls with a bit flour...
...& then allow to rest for another 30 minutes covered with a kitchen towel...

...now cut each roll once with a sharp knife...
...& then bake for about 20 minutes at 200°C (top/bottom heat) in a preheated oven...
...until the rolls are golden & crispy...
...get the done potato rolls out of the oven...
