I just met Leslie Lowe, who is a landscape architect, at the Expo, and I want you to
hear about what she does. She designs food forests in the wilds of.. Whitefish
Montana and southeastern British Columbia. That's amazing, and you were
saying there about one acre each, yeah, that you design,
yeah, but very different clients, right? Yeah, one is a Buddhist meditation
center, the other is an organic farm that has both lamb and chicken, also. So they
wanted something that they can use for the future, right, not just today but
ongoing. Right! And uh, and it's cold hearty, so they're designed for our winters,
through our rough winters with lots of snow and cold temperatures.
How much summer do you have, like three months? From say, April it starts to get warm,
and we can plant in the end of May, generally, and but we could have frost by the
middle of August. This year it'll probably be more like the end of September.
Okay, so you only got three good months to grow. Yeah, but we can grow apples,
pears, plums, cherries, all sorts of, different kinds of berries. So in your
food forest, do you focus more on perennials than annuals? Yeah, mostly just
because of the economics of it, right? We're looking for something that year
after year after year produces, and annuals are are, whether it's tomatoes or
vegetables there's a lot of work every year to rejuvenate that, to restart it.
So we want something that continues. Right, that's awesome.
And you were saying you're one of your biggest challenges is... bears!
Bears. And elk. I don't have that problem in L.A. So, bears and elk, yeah, we have to have -
or elk - six to seven foot high fences and we have to hotwire the top and the bottom
so the bears can't climb underneath that fence. They'd get zapped on their back or
their noses. Do they get trained to kind of know that that's the wire and they
don't want to go anywhere near it? We hope so. You know, or is it always a new bear?
Yeah, it could be. Oh gosh. It could be. So, and we've got badgers. Oh! At Clear Sky, this
is a food forest in British Columbia. Let me hold that while you talk about it. And
they have badgers and they're dancing in the in the food forest. They have a
little video of the badger actually dancing. It's quite cool. Well, is, are
badgers welcome in your garden? They are, because they take care of the vole
population and,.. Voles are a huge problem. Yeah. Yeah between that and raptors, you know
it, it really helps. Did you say raptors? Yeah.
What kind of raptors are we talking? Eagle. Okay. Hawks. Okay.
You got any snakes up there? No, garden snakes. Oh, good. No rattlers. Okay good.

Hi, I'm Miguel Elliott, with Living Earth Structures,
and I'm here at the Heirloom Expo in Santa Rosa, working on sharing natural
building with people. So we're doing adobe construction, right, so we have a
material of earth we've been mixing up with our feet and
just using local clay mixed with sand and straw and I have a little mobile mud
hut here the kids have been enjoying going into, and I have a little adobe
oven over here, that we've been cooking squash. There's lots of squash all over, so
we've been letting people choose a squash and then they put it in the oven
and then in an hour it's cooked to perfection. This morning we had so many
students here from all over the county, coming here, and so we made the house
models using earth and it's been a lot of fun. So, teaching people about natural
building. This is a structure made out of wooden shipping pallets insulated with
straw and covered in an adobe mixture, cob, so I call it the Little Brown
Caboose. So I've been driving this around and children have been enjoying being
inside and amazed at how cool it is on a hot day like this. And so this is to
demonstrate the idea of using pallets as a building material, which I think is
about the best solution i've come across for low-cost housing, because it's very
well insulated, very durable, and cheap. It doesn't really cost me anything at all
to build these, and so I can build structures all different sizes using
pallets with straw and earth.

Vegan Homemade Peach Ice Cream (no machine/churning) - Cling Peach Series 3/3 - Duration: 6:38.
Hi friends, welcome to the third part of this series of California cling peach recipes for
this holiday season.
Today we're making an easy homemade ice cream that is bursting with gorgeous peach
flavours.
This vegan ice cream is thick and creamy and can be made without using an ice cream maker.
Thanks to the canned peaches, this ice cream isn't just empty calories.
Most of the canned cling peaches that we get in Canada come from California where they
are canned within 24 hours of picking, so much of their nutritional value is preserved.
People have been making ice cream manually for far longer than the electric ice cream
maker was invented.
But rest assured, we won't need any considerable amounts of elbow grease to make this ice cream
here thanks to an easy blender method.
So add 4 peach halves to a blender.
So as to get the smoothest ice cream possible, this recipe is a custard-based one.
Much of the creaminess and smooth texture of this ice cream is derived from the cooked
rice.
I recommend a starchy rice for best results but any type of rice will do.
Coconut milk not only contributes to the richness but it also adds more flavour and aroma.
The cornstarch binds everything together nicely and is an essential ingredient here.
I like to use whole vanilla bean in this recipe for the intensity of flavour and I love the
little specks of vanilla throughout the ice cream also.
But you can use vanilla extract as well with equally nice results.
2 inches of the bean is enough.
I am using the whole pod, not just the seeds that are inside.
Cut the pod into smaller pieces for easy blending.
Process everything together until very smooth.
Then pour this mixture in a saucepan and add the sugar.
You could also add the sugar to the blender.
Instead of sugar, you can use a natural sweetener like soaked dates if you wish.
This will change the colour to a brownish hue but it will still taste great nevertheless
and might even add some interesting fudginess to the texture.
Taste and adjust the sweetness to slightly sweeter than you would normally eat this custard.
Simmer on medium heat and stir constantly until a thick custard is obtained.
Do not allow the mixture to boil though.
Transfer into a loaf pan and allow to cool.
This custard itself is pretty delicious with the peaches in there.
If you taste it at this stage, you might simply forget about the ice cream altogether and
start eating the custard straightaway.
Once cooled, place the loaf pan directly in the freezer.
Freeze for 3 – 4 hours.
Then remove from the freezer, wait a few minutes and cut into cubes.
If you do have an ice cream maker, then you can skip all these steps.
That is do not freeze the custard.
but refrigerate it instead for 3 hours until set.
Then transfer the set custard into the ice cream maker and process according to manufacturer's
instructions.
Place the ice cubes in a blender and process just enough to a slushy consistency.
You may need to scrape the blender from time to time to help with the blending.
Or use a food processor.
You may have to process this into 2 batches.
Place the mixture back in the loaf pan.
Optionally, you can add in some diced peaches.
Fold and mix them into the ice cream.
Freeze for at least 8 hours before serving.
To serve, leave the pan on the counter for about 10 minutes.
Then scoop out and enjoy.
Custard-based ice cream made without a machine is best enjoyed no more than 48 hours after
it's made as it has less air churned into it than traditionally churned ice cream.

hi all and welcome back to my channel it is nearly the end of December we've got
Christmas just around the corner as you can see for my really pretty Christmas
tree and I thought I would just do a really quick vlog on how to no I don't
want to say look younger but look after yourself and stay fit as you get
into middle age so I'll be 53 next year and this is what I've learned okay
number one get plenty of sleep now sleep is really really important for
rejuvenating your body you need a nice dark room try not have a TV in your room
if you can help it and just get a good seven at least seven hours of shut-eye
of good quality sleep don't live a life of restriction because if you only get
one life we're not here for very long and I think it's important to treat
yourself nurture yourself don't spend your whole life on a diet spend some
time in a surplus sometime in a deficit and this will create a really good
balance and your body will love you for it and it will pay you back by being
fit healthy and not getting sick too much
I don't think there's any point in thinking about ways to look younger
stay younger I think you've just got to accept it just you know get older
there's nothing wrong in getting older there's people that act like they're in
their 60s 70s 80s or whatever and they're in their 20s d'you know what I mean
I think age is definitely a state of mind and I think one of the things that
is really underestimated especially if you live in a city probably through no fault of your own is not walking you
know the less you walk the less you will be able to walk and just coming out on a
lovely sunny day just you know 20 minutes you know whatever whatever you
feel that you want to do maybe getting off one stop early on the tube if you
live in London or a bus and just taking that time to just walk it's a good time
to gather your thoughts I think it's good for the soul I know it's a bit cliche
but if you don't use it you will lose it and I think people do rely on their cars
much too much these days anyway that's one very important point I wanted to
make I mean to be fair I am very lucky where I live but there's plenty of
beautiful beautiful countryside in England you know in the towns have parks
and green areas and definitely worth a thought peeps
if you're in an office for example write an email and in between your emails just walk around for a
little bit move around twist reaching hands above
your head keep mobile touch your toes just little
things like that every day can make a really big difference basically the
take-home point is if you look after your body it will look after you well I
