Well, I just got back from Doug and Stacy's homestead and Stacey is such a
wonderful cook, and I had so much, well I had five meals with them, homegrown food,
and I just couldn't come home and have a bowl of cereal for breakfast. Now, if you
kind of think you don't like eggplant and you don't know how to prepare it and
it's a little intimidating, but you've grown some and you want to, here's a
simple easy way to prepare it. It takes five minutes and it's absolutely
delicious. I'm pulling mine out now. Look at that. So, this is one Listada di Gandia
eggplant that I had in the refrigerator probably for two weeks and
it was still good, so I'll just go through the basic steps and it's a snap.
Check it out!
Cut the end off. If you've never dealt with eggplant, these can be very prickly.
And some of this doesn't look too keen so I'm just going to trim it up a little bit.
I do about half inch slices.
So, you've got your slices. This is very very simple. You can just put these in a
pan and use foil or you can use parchment paper. It makes cleanup easier.
And I only put the oil on one side. You can do it on both if you like, but it's
not necessary.
Wow, I need to get some more olive oil! I'm almost out. So just take a brush, and
I brushed the disks. You actually can see
Patti and I doing this in the video when Patti from Las Vegas came to visit.
We made it an incredible breakfast and this was part of it. And then just,
this is Parmesan cheese, that I just grated. You grate your own, it's always
fresher.
And then of course I use some salt and
crack some black pepper.
And because eggplant is so popular in Italian dishes, I thought ah, oregano! And
I have this fabulous oregano that I purchased from my trip to Sicily and
that's going to be the finishing touch.
All right, now, this is ready to go into the oven. I'm gonna cook this for about
10 minutes at 400 degrees and then I'm going to start piercing it with a fork,
and if it's tender all the way through, it's ready to come out.
This is my favorite way to prepare and eat eggplant, and it's so easy and very
delicious. Melts in your mouth, mm. I'm gonna whip up some scrambled eggs to go
with this and I'm gonna have a fantastic breakfast and I am starving!
