Hi everyone, welcome back to my kitchen today. We've got a little bit of a different what's for dinner
My girls are on an eating plan and we're coming up with great recipes for them to enjoy
Using the items that they're able to eat each meal. These are chicken meatballs
served in a really beautiful light marinara that we shared in another video served over zucchini noodles and
I can't wait to share it with you. Let's go see how this all comes together
All right, we're gonna get ready making these really delicious and I kid you not these are super delicious chicken meatballs
Now the reason that I came up with this recipe
Was because Molly and Micah for this summer have chosen an eating plan
That is low carb but balanced and they do get some starches and whatnot
But they're also on a workout plan
What have you so we're taking what they're allowed to eat and we're creating recipes from that list
And this is one of them. This is a chicken meatball. We're gonna bake it in the oven
We're going to simmer this in a homemade stovetop marinara sauce. That's very light
No sugar added but we're gonna make that in a separate video and I will link you down below to that video
Where you can see how we made that but these meatballs are super versatile. You can eat them by themselves
You can add your favorite barbecue sauce
You can add put these in simmer them in marinara like we're gonna do today. You could cut them up and put them on a
Low-carb pizza with a cauliflower crust you can put them in a salad if you like
There are a lot of options you can make a whole bunch of these at the beginning of the week when you're doing your meal
prep And then you can eat these for lunch or dinner or whenever you have a protein snack and it's gonna be really easy
So what we're starting off with is two pounds of ground chicken, but I don't like ground turkey. I absolutely detest it
So ground chicken is the way to go for us. I have two pounds here
And what we're gonna do is we're gonna take two eggs and the way we're gonna bind this besides the eggs is almond meal
This is one cup of fine grind almond meal
You can opt to put a cup of parmesan in here as well
But then what we're going to get most of our flavor is through this spice blend that we have here
I have a teaspoon each of kosher salt
finely ground black pepper
Parsley onion powder garlic powder dried basil and I have also a teaspoon of Italian seasoning and pizza seasoning
You can basically make this
Whatever you like because if you're gonna make this like an Asian style
You can throw some soy sauce in here and you can throw ginger and lemongrass here today
We're going Italian style, but you can you know adjust this to suit your desired flavor profile
And then all you're gonna do is get your hands in here and mix this up and then we're going to scoop this
with our measuring scoop into
approximately 1 ounce
Meatballs, that's how easy it is to mix that up
I'm gonna go get my baking sheet and my scoop and we're gonna start scooping these
Okay. I have finished rolling out the meatballs as you can see
I think I got one two, three and a half ish dozen and
we're gonna pop these in a
375 degree oven for 18 to 20 minutes or until an internal temperature on a meat thermometer reads
165 degrees and then we'll be back when these are ready
Okay guys, I just wanted to show you how I spiralized noodles
This spiralizer came with my ninja intellisense kitchen system
You all have seen me use that you've used the blender cup and the food processor that came with it
I love this thing
It literally has replaced at least three appliances in my kitchen and it's so easy to use
so this is the main cup then this is the little
It is not a sponsored video. But at all I'm just showing you how this works. This is the collection ball it came with this
this blade this the only blade it came with but it all they also have other blades you can get for it and
Then this little doodad slips right in here
I mean it is a huge contraption for what it does, but I gotta tell ya, I love it
it works in just a second and
You got zucchini noodles or squash noodles or sweet potato fries
Curly fries you can put so many things in here and spiralize them. You can do apples if you cut them the right way and
Awesome, so anyway, you want to turn it on
And then you're going to set up your zucchini
Make sure you wash it top and tail it and then this thing has like little rubber feet
like grabbers inside and then you want to make sure that the
This has like a little three prong thing and with prongs on the bottom and then you're going to hit the Go button
And then you're always gonna have this little nub thing, I think you can't have a worm
Does the turtle of the worm? All right. Well, then we'll keep it right there
I'd like to do one zucchini at a time and then can just lift it out and have a bowl ready next to you and
Then zucchini noodles. I'm gonna do three zucchini today
You have your choice of how you're going to deal with the zucchini?
I'm not gonna show you what I do with mine
I'm just gonna saute this in a very small amount of olive oil with a little bit of garlic and Italian seasoning
That's as easy as it's gonna get you really only want to do this for a few moments
You don't want this to get super soggy
You still want this to have a little toothsome this to it and you want it to have a nice chew
So you want it like all dente pasta? It's gonna be delicious with the sauce
We're gonna put on it and you'll see this in the finished product
But you guys can handle sauteing this in a skillet with a little bit of olive oil like less than a teaspoon
You don't need a lot
you're gonna just let some of the water come out of it and
Then make sure you saute a little garlic before you toss this in the pan and you'll be good to go
I'm gonna go finish this we're waiting on our meatballs and then we'll come back and we will show you what this looks like our
Chicken meatballs are all done and ready to go
We're gonna simmer half of these in a sauce that I have in the pan underneath this sheet pan
Let me grab a pair of tongs so I can show you
Actually turn it off because it needs to stop spinning
All right. So what I'm gonna do now is I'm just gonna put half of what's on this tray in this sauce
All right, we we've decided that we're gonna simmer all the meatballs in the sauce after consulting
Molly we decided to just go ahead and throw them all in here, but keep in mind you can
Do so many many things with these meatballs and this sauce separately
to
No think outside the box let your imagination
Come up with some really great ideas if you are on some sort of eating plan
The worst thing is getting bored and having appetite fatigue because you're constantly eating
Pan-seared chicken breasts a side salad and half a cup of steamed broccoli
And maybe a little bit of rice if you're lucky so keep that in mind
we're just gonna let this simmer for about five minutes and that's gonna help to infuse these meatballs with the deliciousness of this sauce and
Then when we come back, I'll show you what it looks like because we're gonna fix you a plate because I know you're hungry
