Youtube daily Dec 7 2018

Hey y'all.

It is Hallmark Christmas movie watching season.

I have some of my girlfriends coming over later tonight

for a Christmas movie watching marathon.

I'm going to get in the kitchen and whip up some snacks

that I know they're going to love.

Cast iron skillet pizza, Christmas Rosé,

along with a lot of other snacks that they're going to enjoy

while we watch the movies.

Y'all, pizza is my number one favorite movie watching food.

This cast iron skillet pizza is super easy to throw together

and is going to be great

when my friends come over later tonight.

So for this recipe, I'm going to use a generous amount

of thinly sliced red onion.

I'll heat the skillet to medium/low

and sprinkle just enough corn meal

so that the dough won't stick to the bottom.

I've had my pizza dough sitting out at room temperature

and I like to get this pizza dough from Publix,

which is one on my favorite grocery stores.

It is a game changer.

Let me tell you that my dad's mom actually owned a pizzeria

whenever my dad was little

and they made all these pizza crusts

and my dad learned how to spread pizza dough

in that pizzeria and he taught me how to do it.

First, you hold your hands like this.

You don't want to keep your fingers straight up and down

just because it might poke holes through the pizza.

so you keep your knuckles kind of bent

and hold your dough this way

and spread your dough out.

And then to spin it, my dad taught me to do it.

So you just go

and catch it on your knuckles again.

I take it like this and go around the edges,

and squeeze the air bubbles out.

And it's also stretching the dough

because the eight of the dough is falling down here.

The pull and stretch method is a lot easier for people

that are just learning how to work with pizza dough.

Now that I have my dough, flattened out,

I'm going to put it down into my cast iron skillet

on the stove and what I love about cooking pizza

in a cast iron skillet is that it gets hot enough

and holds the heat like a pizza stone,

but it keeps everything in a skillet

and make it so much easier to clean

than a pizza stone ever would.

I'm going to let this cook over about medium heat

and drizzle it with a little bit of olive oil and salt

and let it cook just until the dough starts to bubble up.

Y'all get in here and see this.

These bubbles are what you're looking for

to know that you're ready to start putting your toppings on.

Jarred pizza sauce is one of my best friends

and I like this Mids brand.

It's actually one of my favorites.

I'm not going to spend the time to make pizza sauce

whenever I can buy something

that tastes just as good out of the jar.

In my opinion, a classic pizza is Italian sausage,

pepperoni, and red onion,

and a lot of cheese and red sauce.

If you have a favorite pizza, I'd love to hear about it.

Throw it in the comments.

I'm going to put just a tiny bit of Kosher salt,

and then a lot of shredded mozzarella.

I've got my oven as hot as it will go,

which is 500 degrees.

If your oven will go hotter, move it all the way up.

I'm going to let this pizza bake for around 15 minutes.

I love making a Charcuterie board for guests on movie night

because as guests are arriving,

they can start snacking on this.

This one is perfect for the holidays

because you can make it in the shape of a Christmas tree.

I've used prosciutto to make a fun, little meat tree skirt

and then I'm just going to keep assembling it

with a couple more things like olives,

and pomegranate arils and some pickled ochre

that I put up earlier this season.

Y'all get in here and look how cute this is.

It's a Charcuterie board shaped like a tree,

perfect for a Christmas movie watching marathon.

Charcuterie boards are always such a mystery

because you never know what's on them.

So I like to take the extra step to label for my guests

what kind of meat and cheese I have on my Charcuterie board.

My timer just went off for my pizza.

I'm going to get it out of my oven.

Look at all that melty cheese.

The final touches for my pizza are going to be

crushed red pepper because everything is better

with a little bit of spice,

and of course, fresh basil.

My dog's name is Basil, y'all, it's my favorite herb.

I love rosé but whoever invented the f-rosé,

that is hands down my favorite.

This is going to be perfect for tonight

because I'm going to put in some frozen cranberries

and rosemary simple syrup,

which turns the traditional summer drink

into a yummy Christmas treat.

Y'all this Trian's rosé is one of my favorites.

I always keep plenty of bottles of this around in the summer

for any time that I need a rosé.

It's one of my favorite cooking wines,

and by that I don't mean that I put it in my food,

I drink it while I'm cooking.

Saint Germain is also one of my favorite liqueur.

It's elderflower flavored, which is so yummy.

If you've never tried elderflower tonic,

or elderflower liqueur, y'all this is the way to go.

The frozen cranberries are going to

add a splash of red color and some tartness

that's going to be great for this Christmas drink.

And last but not least, rosemary simple syrup.

If you want to make it flavored,

add an herb or a spice or something to your simple syrup,

like rosemary while it's cooking

and let the herb cool all the way

in the simple syrup.

My friends should be on the way so I'm gonna buzz this

and keep it in my freezer until they get here.

Y'all look at this pretty pink, frozen Christmas treat.

I'm coming in!

Thanks for having us.

Thanks for coming to movie night.

Hey Sally!

Hey how're you?

I'm good. How are y'all?

Y'all, the most important part is we have rosé.

It's Christmas rosé, so it has frozen cranberries,

and rosemary simple syrup in it.

Cheers y'all.

Cheers.

I got these little individual containers for us

to put our snack mix in so we don't have to spend

the entire time passing the bowl.

Everyone can just re-fill it for themselves

whenever they're ready.

Have y'all seen the new Hallmark Christmas app?

It's called Countdown to Christmas.

You just download it and it adds all of the Christmas movies

to your calendar so you get notified

when the movie is playing on Hallmark channel.

(giggling)

Y'all this is spread was so easy to put together

and it's perfect for watching Hallmark Christmas movies.

Thank y'all so much for coming!

Cheers y'all.

Cheers.

Bye y'all.

Freshmen Members Of Congress Forced To Listen To Lobbyists And Corporate CEOs - Duration: 3:38.

Yesterday, the new first year incoming members of the US House of Representatives were forced

to sit through an orientation meeting where they got to hear from corporate lobbyists,

current and former ceos of major corporations, and not a single leader from Labor or advocacy

or anyone who does their job to benefit the public.

In general, this information was exposed via a series of tweets from both Alexandria Ocasio-Cortez

and a new coming congress person, Rashida Tlaib.

Here's what the pair of them tweeted out first is Ocasio-Cortez, Ocasio-Cortez.

Excuse me.

Um, right now, freshmen members of Congress ready by partisan orientation with briefings

on issues, invited, panelist offer insights to inform new Congress member views as they

prepare to legislate.

Number of corporate ceos we've listened to here for number of labor leaders zero in a

subsequent tweet she said are bipartisan.

Congressional orientation is co hosted by a corporate lobbyist group.

Other members have quietly expressed to me.

They're concerned that this wasn't told to us in advance.

Lobbyists are here.

Goldman Sachs is here.

Where's labor activists?

Frontline community leaders.

And here is a Rashida Tlaib lady who says, Gary Cohn, former CEO, Goldman Sachs, addressing

new members of Congress today, says, you guys are way over your head.

You don't know how the game is played.

No, Gary, you don't know what's coming or revolutionary congress that puts people over

profits.

Here is what I love and I've said this plenty of times about Ocasio-Cortez and and all of

these new members to lab and all of them, they are exposing what is actually taking

place in Washington DC.

Had these two women not tweeted out this information, we would not know it.

We would not know that freshmen members of Congress are being forced to sit in meetings,

having corporate lobbyists tell them what they should or should not think, direct them

on how to legislate ceos from corporations light Goldman Sachs who stole billions of

dollars from the US economy, lecturing them, that they're over their head.

This is disgusting, folks.

This is absolute insanity.

Corporations are running our government and there is no question about it, but with people

like Ocasio-Cortez with people like to lave and some of the others coming in there, people

like Ro Khanna and Ted Lieu who have already been in there for a few years.

We're finally starting to see the truth.

We're seeing everything exposed.

These people are not afraid to stand up to the powers that be and they haven't even been

sworn in yet and that's what I love so much about this because if they can expose so much

corruption and dirt and already changed the way that policy is headed before they're even

sworn in, just imagine how much good they're going to do when they actually hold that seat.

That is what is inspiring.

That is what gives us hope and that is why I think that this new incoming congress might

actually be able to finally do something good for the American public and it's not because

of the old guard establishment members who've been in there for 20 years.

It's because of these fresh faced big idea newcomers who do not come from money.

They did not accept corporate money, and so they know that their loyalty, their allegiance

is to the people of the United States and not these corporate lobbyists that they're

being forced to meet with before they can be sworn in.

Understanding While My Guitar Gently Weeps - Duration: 8:00.

this video is sponsored by Apple Corps.

hey, welcome to 12tone! this November marked the 50th anniversary of the White Album, possibly

the most important album in the history of popular music, and to celebrate, Apple Corps

and I teamed up to pay tribute to the Beatles' greatest accomplishment by looking at one

of the best songs off that album, George Harrison's While My Guitar Gently Weeps.

it starts like this: (bang) and while there's definitely some interesting chords going on,

this section feels almost completely built around the bass. it's playing this simple,

powerful descending line (bang) and honestly, it almost doesn't matter what chords they

play on top of it.

any way you harmonize this line will probably sound good, because the slide down the scale

provides enough structure on its own to hold the entire progression together.

but there are chords, of course, so let's talk about them.

this section reminds me of a device called a line cliche, which is where the harmony

stays pretty much the same except for one rogue line that slowly drifts up or down.

basically, we start on A minor, then the root slowly falls down while the rest of it holds

still.

it's not quite a traditional line cliche, though: first of all, normally the changing

line moves a half-step at a time, but here we go straight from A to G, skipping right

past G# in the process.

why?

well, this accomplishes two things.

first, the options for harmonizing that G# aren't great.

traditionally, this part of a line cliche plays A minor major 7, which is a fairly dissonant

chord, so skipping it helps keep the section from sounding too jagged. and second, it lets

you walk down a bit further in the same four bars: usually, a minor line cliche would end

on F# half-diminished, but by skipping the G# chord we make room for F major, which is

a nicer sound.

the other difference between this and a normal line cliche is that the rest of the harmony

doesn't actually sit still.

if they did, it'd sound like this (bang) which is still pretty good, but it's not what they're

doing.

the first two chords are the same, but after that the harmony gets restless and starts

moving around, so instead of F# half-diminished we get D9, and instead of F major 7, we get

an F major triad.

I still feel comfortable analyzing it as a line cliche because the A and C stay in the

same place the whole time, but the slight variations add a bunch of extra color to it.

still, though, I think this thing is pretty much just an elaborated A minor chord.

there's a sense of motion created by the line cliche, but it's not actually moving very

much.

in the second half of the progression, though, that changes.

(bang) here, we have a pretty straightforward example of functional harmony, which as we've

mentioned before is the idea that different chords in a key have different functions,

or jobs to do.

we start on the I chord, which has tonic function, meaning it provides a sense of rest.

then we go to the bVII, which here I think has subdominant function, meaning it adds

instability to take you away.

the IV chord is interesting here: it has subdominant function too, but more importantly, it's major.

normally we'd expect to see D minor here, and the use of a major IV chord implies that

we may be in a scale called Dorian, which is like minor but a little bit brighter because

it has a raised 6th note.

maybe this choice signals a bit of hopefulness on the part of the narrator?

anyway, after that we see the V chord, which has dominant function, meaning it points us

back to the I chord and the progression starts all over.

so what we've got is a long, largely static section where the harmony's pretty much sitting

still, followed by a section of fairly rapid, powerful motion.

that's cool and all, but in order to really understand how great this progression is,

I think we need to look at the lyrics happening on top of it.

each lyrical phrase can be broken up into two parts.

the first part is something like "I look at you all and I see the love sleeping."

here, Harrison is passively observing a status quo. the world is turning, the floor needs

sweeping, etcetera.

this plays over the line cliche, and nothing is really happening.

the second part, though, is the "while my guitar gently weeps", which is an active expression

of emotion.

he's taking a stand, and when he does, the harmony starts moving.

it's amazing.

there's also a slight variation that happens: for the second half of the verse, we get the

same line cliche, but in the functional section we get this instead.

(bang) obviously the bass picks up at the end, building energy and momentum towards

the chorus, but that's not the important part here.

what I want to talk about is this C major.

this is still basically functional: it's the bIII chord, whose job is a bit ambiguous,

but it definitely can be subdominant.

but more importantly, it's replacing the D major, which was a symbol of brightness and

hope, with something more native to the minor scale.

it also makes the move to E major sound bigger, because the two chords have what's called

a chromatic mediant relationship, which means they're a third apart but they don't share

as many notes as we'd expect.

specifically, C major has a G, but when we go to E major it slides up to a G#, increasing

the sense of resolution when we finally land on A.

anyway, after that we move into the chorus (bang) where we've apparently switched to

A major.

this is what's called a parallel modulation, where you keep the same root but change the

scale you're using.

normally a switch to major would feel happy and uplifting, but I'm not really getting

that here.

this feels more anxious, and I think that's because despite being in a major key, the

section is still chock full of minor chords, and the melody revolves around C#, the 3rd,

instead of A, the root. as for functions, though, we start on the I chord, which is

tonic, then go to IIImi, which is tonic, then VImi, which is tonic, then back to IIImi,

which is… still tonic.

yeah, the whole section is just one function, which means that much like the line cliche

in the verse, these four bars are basically an elaborated version of the I chord. it's

static harmony created through functional techniques, almost like a synthesis of the

two verse parts.

after that we get this (bang) which is, again, much easier to explain.

we start on IImi, which is subdominant.

we sit on that for two bars, then go to the V chord which, as always, is dominant.

that bass walk-up adds a little extra tension, which makes the inevitable resolution even

stronger.

this section also moves slower than the verse: the tempo doesn't really change, of course,

but the harmonic rhythm does, and we sit on each chord for longer before moving on.

we're drawing the harmony out, giving each chord a chance to breathe and letting the

audience really absorb each function on its own.

but there's one last thing I want to talk about in the chorus: the vocals.

Harrison double-tracked his voice, and he sang the chorus slightly different each time.

this sort of texture, where you have the same melody being sung with different embellishments

at the same time, is called heterophony, and it's pretty rare in Western music.

it's much more common in the classical traditions of places like Thailand and the Middle East.

but it's doing more than just creating an interesting feel here: it's telling a story.

you see, this song is generally believed to be about Harrison's frustration with the growing

tension within the band.

they were drifting apart, each starting to go off in their own artistic direction, and

here, that's represented by a vocal line that can't even stay in sync with itself.

the two versions of the melody can't quite agree on what exactly they're supposed sound

like, which is an absolutely brilliant compositional metaphor for the Beatles themselves at the

time of the White Album.

I love it.

so much.

it's so good.

anyway, that's pretty much it.

the only other section is the guitar solo, played by Eric Clapton, which is over the

verse progression.

Clapton was initially hesitant to record on a Beatles song, since it was so rare that

they featured a soloist from outside the band, and even after Harrison convinced him he requested

that his guitar be mixed to sound as Beatles-y as possible so it wouldn't stand out.

that's not super relevant to the analysis, but it's a fun story so I thought I'd share.

oh, and one last thing before I go: in addition to this video, Apple Corps also sponsored

my friends in the band Airplane Mode to record a cover of the song, so if you want to hear

a more modern take on it, there's a link to that in the description.

I consulted a bit on the arrangement so maybe I'm a little biased, but I think it turned

out really cool.

it does what I think every good cover should do: identify the heart of the song, and then

change everything else.

anyway, thanks for watching, and thanks our Patreon patrons for making these videos possible!

if you want to help pick the next song we analyze, just head on over to Patreon and

pledge at any level.
