I'm here today with Chef Michael Lewis from KYU,
that's K-Y-U down in Miami.
And we're gonna do something a little bit different today.
We're gonna be cooking some octopus.
Would you call this barbecue?
Technically it's slow and low over a wood fire
with smoke, and there's gonna be a pot on the grill
for a long period of time over smoke.
I don't know if it really counts as barbecue, barbecue.
But it is a really cool alternative, and it's a lot of fun.
All right, well we're gonna give it a shot.
(heavy metal music)
All right, so I got the octopus here.
I'm gonna transfer it to the pot we're gonna cook it in.
So then I take a couple liters of water.
It's about two, three liters of water.
It's really just enough to make sure
that the octopus is covered.
He's swimming, so he's happy.
He's swimming, he's ready to go.
And then a couple of aromatics, I keep it super simple.
So we got some onions and carrots.
I take a chili, throw that in there.
What kind of chili was that?
That was a serrano chili,
but you can use whatever you have.
Okay.
This is lemongrass.
I've chopped it into slightly smaller pieces
and then just bruise it all up
and then you really get the flavor to start coming out
of that thing. Oh, yeah.
And that's where you get some of that Asian flavor.
Exactly.
This here is kaffir lime leaf.
And so it's a...
It's a lime, the lime itself from this tree
is not super tasty, but the leaves
are really, really aromatic
and fun. Oh, yeah.
This is our way of imparting a citrus flavor
without actually adding any citrus.
Got some ginger. A little bit of ginger,
just peel that up, or at least wash it.
I'm chopping it into some big chunks.
Throw that in there.
And then couple of cloves of garlic
or even a whole head, just cut in half, it doesn't matter,
and just crush 'em up and throw 'em in there.
So there's all our aromatics.
Now we need to season.
So we'll use a little bit of kosher salt
and a little bit of soy sauce, and you're good to go.
So what we're gonna do, we're gonna throw this on the grill.
And we got a nice hot fire going.
He's gonna simmer for about 45 minutes?
About 45 minutes. Okay.
(upbeat rock music)
So first we're gonna make the dressing.
So we call this a hearts of palm and red onion ceviche.
Okay. It's not really a ceviche
in traditional terms,
but we're using very similar ingredients
as you would for ceviche.
But then we put a little bit of a funky cut to it.
I think technically it's called the oblique cut.
Just makes it pretty.
Yeah, just makes it pretty for a cylindrical thing.
It's also a little bit easier to grab with the chopsticks.
And we like to make everything
kind of chopstick-friendly at KYU.
We'll add a little bit of sliced red onion,
and we throw on a little bit of sliced green chilies.
We're using serrano again since we put it in there,
but it can be anything you want.
Does that mean it's gonna marinate in some citrus?
Exactly, exactly. Okay.
And that's it, man.
And I kinda let that marinate in the fridge
for a little while.
It's good immediately.
It's good in an hour.
And it's good in two, three hours.
Oh, great. (upbeat rock music)
Okay, so we've got our octopus.
This has been off the grill now,
and you've put it in the fridge.
Yes.
For how long?
So just for about an hour or so.
You just want it to get firm again.
As it comes off it's still kinda sign of jelly.
So if we get it nice and firm again,
then it's easier for us to cut.
So we have the head here,
and then we have all the tentacles.
And it looks a little bit intimidating,
but if you flip it over, it's super easy.
So we got these perfect lines
that kinda show you where each tentacle is.
What we do is just kinda come up to each line
and do like a wee little V-cut in there.
And then we got a tentacle.
Wow, look at at that!
But take some smoked paprika
and a little bit of olive oil,
and by a little bit, I mean a lot.
And we're basically gonna make a little rub, all right?
That's it, just paprika and olive oil.
That's it.
I like to use the smoked sweet paprika
'cause I feel like we have enough icy going on,
so you don't really need the hot one.
It's just super rich. Yep.
So just grab one. Okay.
Put it in here.
I mean, you really get it on there.
Get it on there, man. Okay.
Now that looks almost like a rib.
I know, right? (Sid laughs)
Slather it up.
And this is already cooked.
Correct. So we're not cooking it.
Right? Correct.
We're just really getting some char on it?
I really try to focus
on the suction cups as well.
If I can get some nice crispy, crunchy on that,
then it has all those different textures going on.
And this is a dish that you all serve at the restaurant?
It is, yeah.
This is one of our more popular dishes
as well. Is it really?
Yeah, I mean, octopus is definitely becoming
more and more of a thing.
Yeah, wow, that's beautiful.
Look at that!
It came out all right, no?
And then I just come in here, get a little drizzle
of that beautiful paprika oil you just made.
Why don't we go and have some octopus?
Yeah, let's go eat one.
Okay, let's do it. All right, cool.
This looks so good.
So it's super tender, right?
That is delicious.

It tastes a little bit
like it's got this sort of rub on it
almost like dry rub ribs.
Exactly. (Sid laughs)
Well you have any advice for just average Joe
who's trying to become a better cook
when it comes to barbecue?
Just practice, 'cause there's no exact science to it.
I mean, you can read all the books, right?
And this amount of meat with this amount of seasoning
at this temperature for this amount of time,
and that gets you pretty close.
And just remember what you did right and what you did wrong.
And whether that's writing it down or taking a little note
or whatever it is, but make sure you make note
of everything that came out well
and keep doing that over and over again
to the point where it's I got this.
You don't even need to think about it anymore.
First thing you ever barbecued?
I think the first thing I ever actually tried
to barbecue, I tried to make my own bacon.
So I was curing it, and I smoked it,
and it actually came out all right.
I heard you have a dog named Bacon.
I do, I do.
He is a 120-pound Alaskan Malamute.
And I made a deal with my wife that I could name the dog
and that she could name all the children.
(Sid laughs) And
I think she got the better end of that deal.
But I still have a dog named Bacon,
so that's pretty cool.
It's your last day on earth, last meal,
what would it be?
Like, right now? Yeah (laughing).
It would probably be arepas from my wife.
My wife is Venezuelan, and she makes
some of the most amazing food in the world,
not just Venezuelan food, like, all food.
It would probably be something from my wife
and a slice of coconut cake from my mom.
(Sid laughs)
Yep. That's great.
That's great.
She still make the coconut cake?
Yeah, she does.
I stole the recipe, and by stole I mean I asked her,
and she gave it to me.
And we adapted it at--
And you guys serve a version of it at the restaurant.
Yep, it's called Mom's coconut cake
Oh, that's great. on the menu.
I love it.
And she's way more famous than I am.

She goes out to restaurants, and they're like, "You're mom?
"Oh, can I give you a hug?
"That's the best cake ever!"
She's awesome.

of our comfort zone when it comes to barbecue,

Conservatives Desperately Try, And Spectacularly Fail, To Smear Rep. Alexandria Ocasio-Cortez - Duration: 5:06.
Conservative pundits, talking heads, media outlets, and all the rest of them on that
side are driving themselves insane, trying to smear representative Alexandria Ocasio-Cortez.
And to be honest, at this point, it's just getting funny because every smear they come
up with, against her backfires spectacularly.
Last week it was the video of her dancing, uh, were hurt or friends were recreating the
dance scene from The Breakfast Club.
They tweeted that out, shared it all over the place, trying to say like, look, this
is her, this is the woman.
Okay.
So she had fun once in college doing something completely harmless.
We're supposed to hate her for that.
All it did was make people look at her and say, this is actually really cool and nice
and wonderful, and we like her a little bit more now.
So knowing that their first smear attempt has failed and, and all previous ones had
as well actually, uh, and that was not their first.
The Gateway Pundit has come out with a new shocking story about Ocasio-Cortez.
And this one might be the one that takes her down.
And here it is.
I'm going to read you the tweet that Jim Hoft to the Gateway Pundit tweeted out, and he
believes this is going to be the end of Ocasio-Cortez.
Here's the tweet, exclusive Yourtown, elitist and Bronx Hoaxer, Alexandria Ocasio-Cortez
went by Sandy, well into college at Boston U. that's it.
That's the shocking story.
She had a nickname that's going to end her career.
It's going to take her down.
There is no redemption from having a nickname in college.
Um, he didn't do a whole article on it.
This Jim Hoft character, the gateway pond, it, and it's absolutely just as stupid as
you could imagine.
We read you a few lines from this last week and anonymous classmate reached out to the
gateway, pundit and sent us several photos of Alexandria Ocasio-Cortez from highschool,
Ocasio-Cortez graduated in 2007 with honors.
Yorktown heights is a middle to upper middle class community located in northern Westchester
County because that's another attack.
They're trying to say that, hey, she wasn't poor because her parents scraped enough money
up to send her to a decent school where she pretty much was.
One of the poorest people, they're like, that's verifiable.
We know that.
That's true.
They tried a few months ago to tweet out a picture of her childhood home saying that
that somehow showed that she wasn't a poor person, but if you look at the picture, yeah,
that wasn't an affluent persons.
Home story continues and much like other Democrat hoaxers, Bobby O'Rourke and Indian, Liz Warren,
Ocasio-Cortez went by Sandy, well into college at Boston University.
In fact Ocasio-Cortez went by Sandy, at least into her junior year at the university.
Sandy from Yorktown became Alexandria from the Bronx.
It was all a big scam.
It actually ends with that phrase.
It was all a big scam as if we've all somehow been hoodwinked because this woman went by
sandy instead of Alexandria.
Now I've had plenty of nicknames drought my life.
I still have people who call me nicknames a thanks to one poorly executed speech.
I had to deliver in college for quite a while.
People called me fruit man.
I did a speech about how to pick out the correct fruit.
Didn't go as planned, and so it got me that unfortunate nickname.
Does that hinder my credibility?
Does that make me a liar or a fraud in any way?
Absolutely not.
Just like calling Beto O'Rourke Beto doesn't undermine his credibility anymore than Ted
Cruz not going by Raphael.
That's what happens.
It's a nickname, but these smears from these conservatives are absolutely hitting ridiculous
levels because they are so obsessed with this woman.
They can't get over it.
And why is that?
Because they view her as a threat if they didn't think that she was a powerful woman
who was capable of making the changes that she has promised to this country, they wouldn't
spend another second even thinking about her, but her and many of these other incoming Democrats,
Rashida Tlaib.
They threatened the conservative power structure and that is why they are quite literally grasping
at straws here just to find something to smear these women with and so far, every single
attack has backfired spectacularly.

Gradebook: How to Exempt a Score in Aspen - Duration: 2:28.

Hello! My name is Denise Miller from BPS technology.
Today I am going over how to exempt an assignment score from Aspen's Gradebook.
The easiest way for me to exempt to score is from inside the cell, where that score is.
Hold down Control and enter E. Once I move away from that cell, I see that Aspen has
put a line through that assignment score and that score is no longer considered in the student average.
Where I've exempted this, I may want to add a Teacher Note with this, as to why I
am exempting the score.
And, only I would see these notes.
I wouldn't want to put it up here with a feedback.
That does show in the portal.
This is my Note, the Teacher Notes and then just click Save.
So, again, I would remember why I exempted that score.
If I've made a mistake, I can just hold down the CONTROL key and enter E again and
move from the cell.
That score is again considered in the student average.
I can also use the Options>Exempt Current Cell.
Here it does show me the shortcut Ctrl+E. Another way I could exempt a score is by using
a special code that I've created and I have a special code for Medical.
After entering that score we see that student's average does not take into account this Medical
score because I've set that to be exempt from calculations.

Beyond the city be a cutie here outside the wall
has a lot of street art, it's really cool!
Here we are right at the entrance to the ski resorts!

we are walking towards the cable car to go up to the Brasov sign
and we are passing by this old fortification,
a hidden place, almost nobody knows, well interesting!
It used to protect the city from external attacks.
On the way to the cable car, we can see the fortification we just visited
and has an incredible view of the city, it's very cute!
and it's in the middle of a park, so...
most of the trees are already without leaves, but it still has a bit of autumn colors!
In winter everything will be covered with snow!
We arrived at the cable car, it's really near the city, ten minutes by walk
But it's closed today! Nobody knew, not even the locals knew it...
There is no way to know if it is closed or open...
and since I do not have more time here in town I can not get up near the sign...
I already have reason to come back!

hi my name is Bill and today I want to be showing you how to replace the gear
clip in your fridge the reason why you might have to do this is because the
clip is broken damaged or missing for this repair we'll be using a flathead
screwdriver and a quarter-inch nut driver warning before doing any repairs
please disconnect your power source so this is the refrigerator we're going to
be using for this demonstration it's a maytag and keep in mind yours at
home might be a little bit different than what we have here but the same
technique should still apply first thing we're going to do is open up our freezer
drawer and we've got to remove the two screws that are holding the door on here
and now that those screws are off you can just lift up on the door and it'll
pull right off and the next thing we need to do is remove these two bin
stoppers here and in order to get it off what I'm doing is I'm twisting up like
so and that should free it and same thing on this side I'm just gonna twist
this up and if you need to just get a flathead screwdriver
wedge it in there give yourself a little bit of help there
so now that the stoppers are out we can remove this top drawer here and we're
just going to pull it all the way to the end and tilt it and take it out and in
order to remove this bottom drawer all we have to do is simply lift it out and
pull it right out and now we've got two screws on each of the slide that hold it
on so we're gonna remove those next and now we're going to take the screws out
on the other side and now I want to push the slides all the way back in and then
I want to carefully pull out and take these slides out and now to separate the
two slides all we have to do is just pull one side out and the shaft pops
right out and now to make this easier when we put it back in I'm also going to
remove this gear clip so you'll see right here there's a slot on the gear
clip and I'm going to just take this flat-head screwdriver
and twist it and make a little bit more room and then I'm going to also pull up
on the clip and I'm just going to be careful so we don't accidentally snap
ourself with that now you can grab your new OEM replacement gear clip if you
don't have one already you can find it on our online store now before we put
the slides back into place you'll see on the backside there two slots and those
will correspond with the two tabs that are sticking out on the freezer there so
we're going to want to is get our slide in there best that we
can then line it up and slide it straight back now that it's on those
tabs you can screw it down and now we just have to pull this slide out just a
little bit so we can get on that bottom screw hole and we'll just push this
slide back in and same thing for this slide we're just gonna line up those slots and
then push it straight back and now we can screw everything back in and now we
could pull this slide out and we can put the shaft into the hole on this slide
like so now I want to feed the gear clip on to the shaft and you're just gonna
want to make sure that the slot is facing the left-hand side over here now
I'll line up the shaft and put it into the slot right here and then I'll take
our clip here and we'll push that down and clip it into place then our slide
should click and close together like so
so now we can put our drawer back in and what we're gonna do is we're going to
angle that back like so and once you get it in there just let it sit down and
then what we're gonna want to do is get that top lid down on both sides and
we're gonna push it back so it goes past there because the back actually is like
a clip and it latches on and when you pull it forward all those tabs right
there should fit nicely into the slots there
so now we can put the top drawer back in and when you do this keep in mind there
are two sets of wheels the wheels that are raised up higher are gonna go
towards the back and we're just gonna line up that wheel with the track make
sure everything lines up set it in there
there we go now we're going to push that back and now we can replace the stoppers
and all we have to do is just line up put it straight back in and now we're
going to line up these two round tabs here with the slots that are in the
front of the drawer slide once those are lined up set it down in there and now we
can screw it back into place and now that we've got it screw back into place
we can close our door and your repair is complete

Welcome to The Website Investor, this Is Jeff Hunt,
and today we're going to talk about increasing user engagement on
your web pages.
Well, what is user engagement
and why do you want to increase it? Well,
user engagement is the interactions the visitors who come
to your website have
with the content on your page
and quite simply the reasons that you would want to increase that
engagement are number 1: it's more valuable to the visitors
and number 2: it sends a signal to Google that
you have great content
and so when Google thinks that it sees user engagement
visitor interaction with their page
and it thinks that you have great content maybe better content than your competitors
it's going to rank your content higher in the search engines,
you get higher rankings you're going to get more clicks
and more visitors to your site so that's why you want to do it.
So in this session we're gonna talk about a number of things
you can put on your web pages that will increase that visitor
interaction with your content
and the first thing I want to talk about is video.
When I put videos on my pages
and then I go look at a tool like Hot Jar that tracks where people
are clicking on my pages,
how they're scrolling and so on,
almost always I see that people are clicking that little arrow that play
button in the middle of the videos as a high percentage
of visitors so lots people loved to watch the videos
and they may continue to scroll
and listen to the videos and read the content at the same time
but many many people click that
and so that increases time on page
and that's a signal to Google that you have better user
engagement. Another one that I want to mention is audio:
audio files that are less common on the web
but a lot of times you'll see this play bar
and you'll see the play button on the side that's audio
and what I have done recently
and I've seen positive results from on
the order of like 15 to 20 percent better time on page
is putting a recording of the
text content in audio format on my
web pages so that's another thing you can do,
it takes you know five to eight minutes to read the text of your article,
record an audio file
and then add that as an audio file in WordPress
but that's a really easy thing that you can do.
Another category is inner linking,
OK. So these are the links between articles on your
website from one article to another article.
So the more contextually relevant the more
relevant links that you have to other articles on your site
the more you're going to be increasing metrics like pages
per session time on site
improving the balance rate.
These are the kinds of metrics that Google has in mind when it's
looking for user engagement
with your content
and we're improving those
with innerlinking,
appropriate innerlinking between articles on our site.
When you innerlink one thing to really keep in mind is that you're going
to get a lot more clicks on links if they are surprising
to users, so if you have a link on an article
that says something like why you should be watching more TV.
Yeah that's a click bait title
and it's going to increase the number of clicks on that
and keep people on your site longer.
So you surprise visitors you say something kind of contrarian
or something a little bit controversial in your titles.
You know you don't want to deceive people
and lie to people and things like that,
not suggesting that, but you want to be very
interesting and surprising for users
and that's going to keep people on your pages.
With respect to innerlinking,
obviously you can use WordPress plugins like related posts plugins
that will put kind of related links at the bottom
of your articles or elsewhere if you adjust it in that way
but actually the most valuable kind of innerlinking is the innerlinking
you do yourself where you strategically put those links within
your article and you put links
with titles that are naturally going to collect more
clicks. Another way that you can make your
articles more engaging for users is the appropriate use of images,
again, like very plain ordinary images aren't going to do
a whole lot for you but if you put kind of interesting images
and you have more images then it's going to tempt people
to scroll down farther on your page
and and gaze at the images as they're going
by or sometimes click on the images to see what's behind the images,
that's another important thing.
One more item that maybe isn't as obvious
but it's just article formatting itself.
So if you break your paragraphs into smaller chunks,
if you have more bulleted lists
or more check marked lists,
if you have call outs with quotes
or definitions,
if you have more titles and subtitles,
all of those things both make your pages more attractive
but they also make your pages more inviting.
In contrast if you have just walls of text
with few massive paragraphs
and stuff like that it's really psychologically intimidating
to see texts like that and it makes people arrive at your page
and neatly bounce off,
see if they can find a page that's more appealing to look at.
So, you're gonna have better user engagement metrics if
your articles have better formatting
and so you definitely want to take advantage of that because it's so easy
to do. To add lists,
to add paragraph breaks, you might have to retrain your
writers because writers don't think in that way
but if you retrain them to think that way
and format things better, you will have definitely better metrics
and better rankings overall.
Another thing is pagination
and what that's a word for is actually dividing your
article into different sections so the
user needs to click like next article
or next section
or whatever the related continuation
of the article might be that puts them on another page from a metrics perspective
that results in lower bounce rate,
its more pages procession, more time on site time,
more time on page and so from a metrics perspective
that looks good.
Now, you have to balance that against the idea that Google
is looking for more broader topic coverage
which usually means more text linked to your article
versus having multiple articles so in most cases I don't
break up my articles with pagination
but it's still something that what you might do is test
it in a particular arena
and you may find that pagination actually
improves the performance of the ranking of your site in
certain situations: like the Mayo Clinic,
I've seen in WebM.D. for example,
do a lot of pagination and so it does work for some
sites with certain characteristics; so all
of those things are really important.
Another thing I believe that Google looks out,
I'm not sure exactly how it measures it,
is whether user scroll all the way to the bottom
of the page or whether they stop at the beginning
or stop in the middle of the page.
Clearly users that scroll to the very end send a signal
to Google that people are interested in consuming
everything that you have to say,
they obviously wouldn't scroll to the end if
if they were turned off at the beginning so that's another indicator.
Again I use Hot Jar - it's a free tool,
there's paid version but Hot Jar records how
people are scrolling, what they're clicking on
and when generally their actions are taken,
it actually makes a recording of the actions that they're taking on your page so you
can get a good idea of how they're interacting
with your page and going to the end.
So these are the things that I do that are well
documented to work
and some of them you're going to find that you get better performance
from doing certain ones of these things than other things.
