Welcome to the Southern Living barbecue pit

for barbecue Q&A with chef David Bancroft

of Acre and Bow & Arrow and the loveliest village

on the planes; Auburn, Alabama.

We're gonna talk about all things beef barbecue.

(fiery rock music)

I like beef and I love tasting the quality of beef.

These came from Barney Wilborn

from the Auburn University Meat Lab.

Bow & Arrow, two miles from campus.

Acre which is literally two blocks away from Campus.

So we can get this beef processed and sautered

by our students by our students

Wow.

And then delivered to our restaurant.

So it's a very simple rub, very straight forward.

Chili powder, cumin, garlic powder,

fresh ground black pepper, Perfect.

Kosher salt.

It's a dry herb.

I always like a dry herb in my rub as well.

Which one you got here?

This is just dried thyme.

Flick of sugar, so it doesn't burn while it smokes.

Right, right.

The quality of the beef is so important

and I think that kinda speaks for most barbecue.

We are serving meats literally, I mean singing acapella.

There's no where to hide, you order them.

You're ordering off of pit, over the coals.

The butcher is gonna carve your barbecue, put it on a tray.

So we are truly paying homage to the quality of beef,

the quality of product that we have.

So we're gonna mirror that with the spice rub.

It's not over aggressive, it's not overly spiced.

I like this, yeah.

It doesn't have to cure for multiple days.

We're just a dry rub, throw it on the smoker

and let it do its thing.

I love this.

I come from the school if sauce isn't on it, I may

or may not put any on, because I feel like

it's kinda there by design.

So in Texas you have lean brisket, moist brisket;

I brought the whole thing, and I'll show both ends of it.

On one side you got the lean,

and one side you have what's called the moist.

I like it.

Oh yeah.

Oh baby. Whooo wee.

Beautiful.

Why would you want to cover that with sauce?

You can see how it tapers Yep

And goes down. Okay, okay.

It's obviously all your fat

and you got multiple fat layers

running through this backside

and then you got a flat up here.

If you're a rib eye eater Yes

You're a moist or fatty brisket eater.

Completely. If you like clean barbecue

and you don't want to put it on your hip and your waistline.

You need to go on this side.

Yeah, but there's no fun in that.

I mean that's not living really, you know.

It's not.

We gotta see this, let's get in here

and really take a look and see what's happening.

Oh man, look at that.

Amazing color.

It's taking everything I can not

to just shove this in my mouth.

As you can see the lean side there still

got this delicious fat that's kind

of protecting it in a way.

Gonna be a lot more approachable.

Right.

For most people, but there's noting wrong

with the lean side.

Trust me, there's nothing wrong with this at all.

I prefer to do whole briskets, and the reason

is cuz you're gonna get a lot more even fat going through.

Right, right.

On each side of it.

That way, while smoking it you're not going

to lose a lot of that natural basting that's going on.

Okay

Smoking it with the fat cap up,

letting it drip down into the beef constantly.

Exactly.

That's why the lean side, you know, even the tail end.

I mean, look at the burnt ends falling apart.

Yeah.

When the burnt ends are falling apart.

Yeah.

Something happening right there.

Something was good in there.

I love that.

And now I'm gonna show you the fatty end.

I'm just gonna cut a chunk.

I want you to see the cross section of this.

Okay.

Oh baby.

Oh wow.

Let's turn that around.

Look at that.

Alright people, get in and see that.

So in here you can see all

the fat layers running throughout.

Yes.

Watch this here.

I want to hold it, I feel like I'm holding a puppy

or something you know, you just gotta do it.

So there it is.

Oh my God.

A super duper tender piece. Yes.

You got yours?

I got mines right here.

Look at that.

Cheerio mate.

Cheerio.

Oh my God.

Oh dude.

I mean, every nation has their fire,

their food that they do over fires

and how they fellowship over it.

Totally, totally.

But barbecue, I mean, that's America.

That's America.

And I think, in my personal opinion is that barbecue

and backyards create some of the best chefs in America.

Right.

I started on the grill

and then I taught myself French

and I taught my self European technique.

My buddies used to come over to the house

in San Antonio and I'd pull a brisket after a baseball game.

Yeah.

And we would just eat it with our hands.

Sure.

Barbecue for me is about simplicity.

It's about letting something shine

for the just the quality and the time spent.

Once you get over a fire,

everything else in life is no null and void.

Yes.

Doesn't matter where you're from, what gender,

what ethnicity, what religion, what happened today,

you know everything is okay over a fire.

(fiery rock music)

So this is a blend of beef and venison sausage.

Oh wow.

As a hunter, I also bow hunt.

Sure.

Bow & Arrow.

and one of the best things that every hunter loves

is when their processor makes jalapeno cheddar sausage.

Okay.

So this has got ground rib eye, ground brisket, and chuck.

And this has venison in it as well.

Okay.

Lots of fresh jalapenos, we grow those out of Acre.

Then you've got chopped cheddar.

Uh huh.

So when you cut into this, you should be able

to see the jalapenos, the cheddar.

The cheddar, yup.

Oh man

See there's big chunks in there.

Oh wow, look at that.

All the cheddar pockets in there.

That's fantastic.

I love it.

The first thing that happens, this warm creaminess

of the cheddar and I get like, beef kinda in your face.

Then the sauce or the venison kind of undertone.

I like about halfway through you start getting

that green vegetable note.

Yes, absolutely.

The jalapenos start sneaking up,

just a little grassy and then it starts to bite.

Most barbecue restaurants, especially in Alabama,

not a lot of places venture into sausage.

They really don't.

It's super labor intensive.

It's difficult to make.

It's very inconsistently made but in Texas it's different.

So I very much enjoy bringing this to Alabama.

Baby, baby, baby, baby.

Beautiful, I mean the first thing

that jumps out at me is that amazing color.

These beef back ribs, like I said,

have that beautiful rib eye fat

that's going between the bones.

The role of fat plays in this and with the brisket,

it's sorta self basting, in this case, self-lacquering

cuz that fat is unbelievably.

Oh wow, that's so crispy.

And if you can see while he's sitting there,

that rib eye fat is oozing with moisture that

is gonna be oozing off into each rib.

As I said earlier, the beef back ribs

don't require just, crazy over handling.

Right.

Very simple, light rub.

Just let the smoke and that fire do its thing.

I mean this right here was about three and a half hours.

That's quick.

Quick and delicious.

Yeah.

You can see this, the fat's got a little crispiness to it.

Grab that piece.

I've been wanting to grab that piece.

Can I pull it off?

Yeah I would snatch it.

Mmm.

Dude. I'm getting a piece.

Get in there, your turn.

I want a piece.

It just melts in your mouth.

It's crispy but like.

You get a chew but then it kinda dissolves.

This is barbecuing at its finest.

I'll tell ya, this is it.

They're super tender but they're not just

fall right off the bone.

They're gonna have a little bit of chew.

I like to have it just a little bit of tooth to it.

Okay, yep.

I mean just, you're eating off a giant hunk of beef rib.

I like to know that I am.

We got some of your sauce here

that my hands are so coated in all the beef fat

it just slide it right off.

So our rub was simple so this can have its own character.

They're not combative, it's not a big pile

of mud of the same thing.

Right.

So over here we're definitely doing

that tomato based Texas style,

vinegar driven, not quite too sweet, lots of black pepper.

But that vinegar is gonna cut through that fat.

As a fine dining chef, you always try

to enhance and overdo things.

This is literally about backing away, let it do it's thing.

The sauce, for here, is just to add another note

to cut through the fat.

Yes

The same with brisket, I would use this sauce

on beef brisket, because of the fat and on the beef ribs.

You've hit on something that really just,

I don't know it's a love so much.

You said, you know this is about sort

of stepping back, letting things happen

and let these very humbling ingredients do their thing.

For me, in this sauce land, this isn't

about a basting brush, for me it's more just have bites

in and out of sauce.

I want you to be reminded

of the bark by itself and then I want you to go

in with the barbecue sauce and have

that ying and yang, back and forth.

Oh man, licking my lips is really like an incredible joy.

You know if you eat 'em this way, it makes a happy face.

(laughs)

I can feel the beef fat coursing through my veins.

Beef coma is on the way.

Contacts.

Add a Contact:

From the Home screen,

swipe up from the bottom of the screen to access the apps tray.

Select the Contacts app.

Select the Add icon.

Enter the desired contact's name and phone number.

To add a photo to a contact, select the Photo icon.

Select the desired option.

Navigate to, and select the desired photo.

Select and drag the handles as desired to crop the picture.

When finished, select "Done".

To save the contact, select "Save".

Edit a contact:

To edit a contact,

from the Contacts list, select the desired contact.

Select the Edit icon.

Enter the desired information and select "SAVE" when finished.

To set the ringtone for a contact,

select the Menu icon then select "Set Ringtone".

Select the desired ringtone, then select "Okay".

Delete a contact:

To delete a contact, from the desired contact,

select the Menu icon then select "Delete".

Select "Delete" to confirm.

Take a Picture:

From the Home screen, select the Camera app.

Alternately, you can access the Camera app

from the Lock screen

by swiping up from the Camera icon.

You can also double-press the Power Lock button

to access the camera.

To switch between rear-facing and front-facing camera,

select the Switch Camera icon.

To switch to different camera modes,

swipe right or left to the desired camera mode.

To focus the camera,

select the screen where you would like the camera to focus.

To zoom in, select and drag the Zoom icon to the right.

To zoom out,

select and drag the Zoom icon to the left.

To take a picture, select the Capture icon.

To take a screenshot,

simultaneously press the Volume Down and Power Lock buttons.

Take a Video:

To record a video from the Camera app, swipe left.

Select the Record icon.

Select the Stop icon to stop a recording.

Videos will automatically be saved to your Photos app.

Access, Edit, and Share a Picture or Video:

To view, edit and share pictures or videos,

from the Home screen, swipe up to access the Apps tray.

Select the Photos app.

Navigate to and select the desired content to view.

To share a picture or video,

select the Share icon then follow the prompts to share.

To edit a picture or video,

select the Edit icon then follow the prompts to edit.

Set Up Voicemail:

The AT&T Visual Voicemail app

will need to be downloaded

in order to set up and access voicemail.

From the Home screen, select the Play Store app.

Select the Search field,

then search for "AT&T Visual Voicemail".

Select "AT&T Visual Voicemail".

Select "Install".

The app will take a moment to download.

To set up voicemail,

from the Home screen,

swipe up from the bottom of the screen

to access the Apps tray.

Navigate to and select the Visual Voicemail app.

Select "NEXT".

Review the permissions and if you agree,

select "ALLOW".

Select "ACTIVATE VISUAL VOICEMAIL".

Access & Check Voicemail:

When you receive a new voicemail,

the Voicemail icon will be displayed

in the Notification bar.

You can also access and check your voicemail

by selecting and holding the One (1) key from the dial pad.

From the Visual Voicemail app,

select the desired voicemail message.

Select the Play icon to play the message.

Select the Stop icon to stop.

To delete a message, select the Delete icon.

Select "Delete" again to confirm.

Change Voicemail Password:

To change your voicemail password,

from the Visual Voicemail app,

select the Menu icon then select "Settings".

Select "Change Password", enter the new password,

enter the password again to confirm,

then select "CONTINUE".

You can also access your voicemail

to change your password

by selecting and holding the One (1) key

from the dial pad

and following the prompts.

However, you must know your current voicemail password.

If you have forgotten your existing voicemail password,

you will not be able to access your voicemail

until you reset your voicemail password.

To reset your voicemail password,

go to att.com/resetvm.

Voicemail Settings:

To access voicemail settings,

from the Visual Voicemail app, select the Menu icon.

Select "Settings".

Edit the settings as desired.

Fingerprint Security Lock.

Set up Fingerprint Security Lock:

Swipe down from the Notification bar

then select the Settings icon, select "Security and location",

select "Fingerprint", select "NEXT".

To use fingerprints to unlock your device,

you must first set up a back up lock screen type.

Select desired backup unlock method.

For this demonstration, Pattern will be used.

Review the secure start up prompt

then select the desired option.

Enter the desired pattern then select "NEXT",

enter the desired pattern again then select "CONFIRM".

Review the prompt then select "DONE".

Review and follow the prompts

to register your fingerprint to the device.

Place your finger on the Fingerprint sensor

on the Power Lock button on the right side of the device.

Lift it off and repeat.

Moving it slightly between attempts.

If you would like to add another fingerprint,

select "ADD ANOTHER", to continue, select "DONE".

Change Secured Lock Time:

To change your lock screen time

from the Security & Location screen,

select the Settings icon next to "Screen lock".

Select "Automatically lock".

Select the desired option.

Using a Fingerprint to Unlock the Device:

To unlock your device using your fingerprint,

from the Lock screen place your finger

on the Fingerprint sensor on the Power Lock button

on the right side of the device.

Add or Remove Fingerprints:

To add an additional fingerprint,

from the Security & Location screen,

select "Fingerprint".

Enter your back up unlock code, select "Add Fingerprint",

then repeat the process

from adding your initial fingerprint,

select "DONE".

To remove a fingerprint,

from the Fingerprint screen,

select the Delete icon next to the desired fingerprint,

select "DELETE" to confirm.

To turn fingerprint lock off,

remove all fingerprints from the device.

From the Fingerprint screen,

select the Delete icon next to the final fingerprint,

select "YES REMOVE" to confirm.

Reset Device.

Power Cycle:

There are multiple ways to reset your device

if you are experiencing issues.

The first is to perform a power cycle.

To turn the device off,

press and hold the Power Lock button

located on the right side of the device.

Select "Power Off".

To turn the device back on,

press and hold the Power Lock button.

The device will take a moment to power on.

Restart:

If a power cycle doesn't fix the issue,

try performing a device restart.

Press and hold the Power Lock button.

Select "Restart".

The device will take a moment to restart.

If you are unable to access the screen,

or if it becomes unresponsive,

press and hold the Power Lock button for 10 seconds

to force a restart.

Reset Network Settings:

If you are having connectivity issues,

you can try resetting your network settings.

From the Home screen

swipe down from the Notification bar

then select the Settings icon.

Select "Network & Internet".

Select the Menu icon

then select "Reset Wi-Fi, mobile & Bluetooth".

Select "RESET SETTINGS".

Select "RESET SETTINGS" again to confirm.

Factory Reset:

A factory data reset

will revert the device back to factory settings.

It will permanently erase

all personal data, preferences, settings and content

such as pictures, ringtones and apps

that are saved to the device.

It is recommended that you save or backup important data

before proceeding.

From the Home screen,

swipe down from the Notification bar.

Select the Settings icon.

Scroll to and select "System".

Select "Reset options".

Select "Erase all data (Factory Reset)".

Select "RESET PHONE".

Select "ERASE EVERYTHING" to confirm.

Alternate Factory Reset:

If unable to perform the standard factory reset

using the previous steps,

try the alternate method

by first powering off the device.

With the device powered off,

press and hold the Power Lock button and Volume Up buttons

until the Android recovery screen appears.

Press the Volume Down button

until "Wipe data factory reset" is highlighted.

Then press the Power Lock button to select.

Press the Volume Down button to highlight "Yes",

then press the Power Lock button to select.

The device will take a moment to reset.

Ensure that "Reboot system now" is highlighted,

then press the Power Lock button to select.

Battery Tips.

Charge the Device:

Use the original charger

to maintain optimal battery performance

over the life of the device.

The battery comes partially charged.

When new, a fully discharged battery

requires up to 32 minutes to charge from 0% to 50%,

and 1 hour and 59 minutes to charge from 0% to 100%.

You can use the device while charging.

Battery life and charge cycles vary by use and settings.

While charging,

the Charging icon will be displayed

in the Notification bar.

The device has a standby time of up to 23 days

and a use talktime of up to 24 hours.

View Battery Usage:

To view the device's battery usage,

swipe down from the Notification bar,

then select the Settings icon.

Select "Battery".

The apps and features that are consuming battery

will be displayed at the bottom of the screen.

To view the battery usage details

of a particular app or feature,

scroll to and select the desired app or feature.

Conserve Battery Life:

To turn on Battery Saver mode,

from the battery screen, select the Battery Saver switch.

You can also conserve battery life

by adjusting the device's display settings.

From the settings screen, select "Display".

Select the Adaptive Brightness switch

to disable auto brightness.

Select "Brightness level",

then set the Brightness slider to a lower brightness setting.

To turn off live wallpapers,

from the display screen, select "Advanced".

Sleet "Wallpaper",

then navigate to, and select the desired option

that is not a live wallpaper.

To set a shorter screen timeout,

from the Display screen, select "Advanced",

then select "Sleep".

Select the desired option.

To change the display's refresh rate,

from the Display screen,

select "Refresh rate" then select the desired option.

Disable features when not in use to help conserve battery life.

From the Home screen,

swipe down from the Notification bar twice.

If enabled, select "Wi-Fi" and "Bluetooth" to turn them off.

From the Settings screen, select "Security & location".

Scroll to and select "Location".

Select the Location switch to disable location services.

To turn off auto-sync, from the Settings screen,

select "Users & accounts".

Select the Automatically Sync Data switch.

Select "OK".

If disabling auto-sync,

remember to turn it back on to allow apps

to download new emails or social media posts.

To disable apps from auto-updating,

from the Home screen, select the Play Store app.

Select the Menu icon.

Select "Settings".

Select "Auto-update apps".

Select "Do not auto-update apps", then select "DONE".

If you are travelling

and do not have access to mobile or Wi-Fi networks,

switch to Airplane mode.

Swipe down from the Notification bar twice.

Then select the Airplane Mode icon.

You can use the Razer Chroma app to conserve battery life.

From the Home screen,

swipe up from the bottom of the screen to access the Apps tray.

Select Chroma, select "Low" under "Battery Consumption".

You can also use the Razer Cortex app

to enable battery saving features.

From the Home screen, select Razer Cortex.

Select "Power Save" under "Select Mode".
