Hi Everyone, how are you all? Today I am going to show you an authentic recipe which comes out really soft and delicate
The name of the recipe is Kharvas and some people also call it Junnu
Kharvas is know to be very light sweet dish which is made from the first three day's milk of cow after delivery
It comes out really soft and tasty
But that milk is not accessible to everyone everytime, I have figured out a way to prepare it with very few ingredients
Let's move into my Kitchen and see how the Kharvas is prepared
To prepare Kharvas/Junnu, first you have to take condensed milk in a bowl
i am pouring some condensed milk here
then i am adding two tea spoons of corn flour to it
this is corn flour powder some people call it corn starch
we will mix it well so that there is no lumps in the mixture
if you want you can use custard powder instead of corn flour
Mix it well
Next we will add curd into the mixture, we have to use thick curd here
If you want to make your curd thicker, you can hung it in a thin clothe for sometime
We will again mix all the ingredients well
Next i am adding some milk here and again whisk the mixture very well
I have taken all the ingredients in same quantity
Condensed Milk, Curd and Milk, i have taken all of these ingredients with the meaurement of this cup
You will get this cup easily in the market
Whatever you are using for measurement, keep in mind to take equal portion of each ingredient
Mix everything well and for flavouring i am adding some cardamom powder to it
And again whisk everything well
If you want you can also add some saffron to it
so now basic mixture is ready
Now we will take a pan, you can also use pressure cooker
i have added some water into it for steaming
and for giving some height, i am putting a ring/stand into the pan
so that container doesn't touch the base directly
While the water comes to the boil let's prepare the container
Transfer the ready mixture evenly into a container or a baking mould or any plate, whichever fits into your pan or pressure cooker
Then i will sprinkle some cardamom powder on the top of it
Now the container is ready for steaming
Now we will place the container over the ring/stand very careully for steaming
Then i will cover the pan with the lid
and we will steam it on low to medium flame for 35 to 40 minutes
after 40 minutes, let's remove the lid and check whether it is ready or not
To check whether it is cooked or not, take a knife/toothpick and pierce the mixture with it, if knife comes out clean it means kharvas has been steamed well
See, it has been cooked well
and it is not sticked to the sides, which is an another sign that it has been steamed well
After removing out we will have to completely cool it down
Once it has been cool down, we will refrigerate it to set it
Do not skip the refrigeration step, as it is very important otherwise while cutting, all the pieces will break and everything will get really messy
I will suggest, once the mixtures cools down to room temperature, refrigerate it for atleast 30 to 60 minutes
It is completely cool down and you can see it has been set really well
now we will cut the set mixture into pieces
I am cutting the mixture vertically
I am cutting the mixture vertically from opposite sides so that the mixture is cut down into square pieces
You can cut it down in small or big pieces as per you like
Then remove it slowly from the mould
See how beautiful it is looking
Let me show you from all the sides, it has come our really soft and delicate
it has been steamed very well and set as well in the refrigerator
Follow the same process and remove all the soft pieces from the mould for plating
if you want you can also sprinkle some dried fruits over the pieces
Let cut a bite for you
You can see how soft and delicate it is
You can see the texture
This piece is enough to see how soft it has come out
Now that i have cut a bite for you let me taste it as well
Yummmmmm. It has come out really really really soft and delicate, it melt down the moment i took a bite
