Homemade Giant Twix

Welcome to a new video...
...in today's video I show you a recipe for a giant Twix bar...
...first we have to prepare the loaf pan...
...with a stable & flexible plastic plate as we did it while baking the Duplo a few videos before...
...so that a rounding occurs at the pan's bottom...
...then grease the loaf pan with oil & line with a sheet cling film...
...for the caramel combine 200 grams sugar, 130 grams dextrose, 75 milliliters water...
...& 200 milliliters cream into a large pot...
...then heat up over medium heat while stirring constantly...
...keep on stirring once the sugar is completely dissolved & the sugar mixture starts to simmer...
...as soon as the mixture simmers stop stirring & allow to simmer over medium heat...
...meanwhile constantly check the temperature with a candy thermometer...
...& once a temperature of 120°C is reached...
...pull the pot from heat...
...finally add 25 grams butter...
...& allow the butter to melt in the hot caramel by tossing the pot back & forth...
...then pour the hot caramel into the prepared loaf pan...
...& allow to cool at room temperature for 1 hour, then for another 2 – 3 hours in the fridge to set completely...
...let's continue with the cookie layer...
...for that combine 250 grams flour, 125 grams sugar, 125 grams cold butter, 1 egg, 1 sachet vanilla sugar...
...& a pinch of salt into a mixing bowl &knead together all ingredients...
...until a smooth dough...
...if the dough seems to be too sticky simply add a bit more flour...
...about 15 20 grams...
...depending on how large the egg is...
...transfer the done dough to a lined loaf pan...
...& press the dough as even as possible to the bottom of the pan
...to smooth down the surface you can simply use a cake lifter...
...then bake in the preheated oven...
...at 180°C (top/bottom heat) for about 40 minutes...
...then get the pan out of the oven & allow to cool...
...once the cookie & caramel are cooled completely...
...cut the edges of the biscuit with a knife to the width of the caramel layer...
...in my case 7,5 centimeters...
...then line the countertop with a sheet baking paper...
...also melt 150 grams milk chocolate...
...& pour about 125 grams of melted chocolate onto the baking paper...
...spread with a spoon until you reach the size of the cookie...
...& then press on the biscuit onto the melted chocolate...
...pour the rest of the melted chocolate onto the cookie...
...& "stick" the caramel layer on top...
...remove the cling film & allow the chocolate to harden completely...
...cut off the excess chocolate...
...at the bar's bottom with a knife...
...& with your fingers slightly press down the caramel at the sides...
...to ensure an even transition between caramel and cookie...
...next, again line the countertop with a sheet baking paper...
...centrally place 2 equal high coffee mugs onto the baking paper...
...carefully put the Twix onto the mugs...
...& pour over with 300 grams melted milk chocolate...
...now for the typical Twix pattern we need a hairdryer...
...also a wide adhesive tape...
...tape the hairdryer with adhesive tape, so that the air can only escape through a small slit of about 0,5 centimeter...
...then "blow-dry" the bar's top from front to back to form chocolate strips onto the surface...
...finally remove the chocolate tips at the bar's bottom with a knife...
... & allow the chocolate to harden completely...
...that's what the Twix looks like...
