to three hours to make. - Absolutely.
Tonight, they've got to do it in 45 minutes.
So the first thing, nail the broth.
Caramelize the vegetables.
But more importantly, overwork this broth, and you're
gonna ruin the flavor.
Secondly, if those dumplings steam and burst open,
it's game over.
For me, it's about being a technician of flavor.
