FNCE I had the opportunity to meet a diversity of dietitians that I
personally have been crushing on on Instagram if you guys are curious to
know who I met it's going to be in my description box below additionally a
special treat for you I have interviews with these dietitians and they have been
so nice and so willing to share this information with you so you guys are
going to be seen videos interspersed among my normal videos on the dietitians
that I met at FNCE and their different expertise
so the first dietitian that I actually wanted to introduce you guys to is
Gisela Bouvier and Gisela has been a dietitian that I have been crushing on
for some time so Gisela in my opinion is an expert on
nutrient analysis and definitely having a nutrient analysis is important
depending on what field you're working in Gisela is an English and Spanish
speaking registered dietitian with over 8 years of experience she offers
nutrition counseling and education to help her clients create a positive
healthy food atmosphere and environment clients learn how to be intuitive about
their eating habits and as well Gisela teaches them how to remove that guilt
associated with food this enables clients to enjoy the foods that they
love the most Gisela is a woman that has struggled
with eating disorders over a decade so her passion revolves around helping
others do away with diets and focus on what their bodies need and desires she
promises unconditional education and support to all her clients so Gisela is
actually one of those dietitians I do use as a resource and I'm telling you
when she says that she is dedicated that girl is dedicated without further ado
Hi my name is Gisela Bouvier, I'm a registered dietitian nutritionist and the owner of bnutritionandwellness.
Today we're going to talk about the need for nutrient analysis.
Essentially it is the composition of the macronutrients, micronutrients, and calories in a food item.
So let's see where do we really see nutrient analysis? We see nutrients analysis particularly in food products--prepackaged food products in particular
we see the calories, the grams of fat, protein, we see grams of sugar and sodium.
however some other micronutrients may be missing (for example) some items will potassium and some items won't.
or we'll see percentages of some items such as calcium and Vitamin A, but not necessarily
the micronutrients of it --the amount of micronutrients
According to the European Journal of Clinical Nutrition
food composition is necessary in order to assess diet quality and also apply and develop food based dietary guidelines
and in turn this serves as a
nutrition education tool for the public.
So what does this mean for us as dietitians
this means we're able to educate our clients and our patients on how to read a food label and in turn show
the quality of the food and how it fits in their diets. In the European Journal of Clinical Nutrition
the food composition databases are far from being complete. A lot of the databases still lack
information that's why a lot of food labels still lack information for example things like potassium
and phosphorus won't be found on all food labels and this in turn can significantly affect people with different illnesses
such as people with renal disease
Nutrient analysis has also become really huge in restaurants
so more and more we're seeing more restaurants with the calorie es in a given food item
or how much fat it has and there's also a huge wave in like the lower fat "healthier for you" menus in different
restaurants so again this is again another way to educate the population on better health options for them
let's talk about the new food label --shall we? This is big again is a part of the
education tool to the public so the FDA required for the nutrition
label to have a few things changed on it for example the size of
calories on the food label itself for us to be more aware of calories in a portion size
Really, really important to know that and also the calories from sugar
we a lot of times see the total grams of sugar but it didn't actually account for the natural sugars
so they're noting the added sugar and how that plays into
the total composition of the food item. So again this is another way to educate the population on the
added sugars and the overall quality of the food item. Now as a dietitian who has done a lot of nutrient analysis for hospitals
I run basically would run all the food items through the database and see how it correlates for a particular diet
so what micronutrients were missing
if the overall calories are within a
certain range for the certain patient population
Now that I do note that there's a lot of; while working in this industry I do note that again like as I said
before there's a lacking of micronutrients information so a lot of times I could say hey
for renal patients we're meeting 70% of phosphorus which is great because we wanted to be in a little bit more
of a deficit for this population but we're not keeping account of the pre-packaged
barbecue ribs how much phosphorus contains
because yeah information was lacking
so just like the European Clinical Nutrition Journal says how databases are still far from complete
the same thing happens here in the US our nutrient databases particularly the
USDA one still has a lot of missing products and at the same time a lot of just general foods
that don't have nutrient information on them. So how does that play a role in overall health?
I tell all my clients no matter if you keep track of every single calorie or every single micronutrient you consume,
you're never going to know the actual truth it's unfortunate but even the
slightest ounce all vary.
I have to say as was dietitian when I was working in the industry of nutrient analysis it
frustrated me a lot I think that there's a huge movement toward being able to provide accurate nutrition information
but we're still far from it. I think the databases need to be more complete I think we need more analysis of food and how it affects
our bodies at the same time and our overall health for us (dietitians) to be able give proper nutrition education as well.
